  • Power Source: Electric units give precise control and run on standard outlets; fuel-canister chafers are portable but require fuel storage and ventilation.

The 4-Hour Rule

Food held in the temperature danger zone — between 41°F and 140°F (5°C and 60°C) — must not sit out more than 4 hours total. Label every pan with the time it was set out, and train staff to discard, not reheat, product that exceeds the limit. Reheating does not reset the clock; it only re-enters the danger zone again.

Energy Efficiency

Insulated, fully enclosed units hold temperature with far less energy than open displays. Look for:

  • Insulated wells — reduce energy draw by up to 30% compared to uninsulated units

  • Lids and covers — keeping pans covered cuts heat loss dramatically during slow periods
